The Tobermory Princess Hotel owner, Anna Roussakis is doing her part to help reduce waste.
Did you know that you can bring your own reusable beverage container or water bottle when dining at Pharos, or staying at The Tobermory Princess Hotel?
During a recent interview with Anna, we shared information about the Saugeen Peninsula Reduces Waste – BYO (Bring Your Own container) initiative and learned about a few of the many ways that Anna and her staff are using best practices working toward waste reduction.
During the past four years, local Community Science projects – Hike It! Love It! Keep It Clean! organized by the Peninsula Bruce Trail Club (PBTC) and Inspector Seabin organized by Sources of Knowledge (SoK) have been collecting, sorting, counting/weighing litter found on the Bruce Trail and in the water at local harbours in Tobermory and Lion’s Head.
Facts from both projects reveal that cigarette butts and food and beverage containers (and pieces of containers) are the leading littered items found both on land and in our water. Both of these items contain plastic ingredients which leach into our water and soil, and threaten our health and health of local flora and fauna.
We wanted to learn more from Anna about other practical ways their business uses to reduce waste, too. Their vegetable waste is given to a local farmer, helping to contribute to a circular economy. And, they encourage their hotel clients to consider reusing their towels for a day or two longer, if staying more than one night. Their rooftop solar panels help to generate energy, too! Now, when dining in our ordering take out at Pharos Restaurant, you can bring your resuable beverage container for water and hot beverages.
We know that waste reduction requires a commitment at all levels – individual, business and institutional. While policies and practices at work and government are being developed and fine tuned, businesses can help to shift public choices. By providing alternatives to single use food and beverage containers, our community can reduce waste found in our local water and land.

Last year, PBTC and SoK launched an initiative called, Saugeen Peninsula Reduces Waste – BYO – recognizing local businesses that are working toward waste reduction. Each participating business will display the Saugeen Peninsula Reduces Waste – BYO decal. This decal helps to raise awareness about bringing your own reusable food and/or beverage container. As individuals we can make a difference through the choices we make. Refuse, Reduce, Reuse, Repurpose and Recycle.
